Have followed the instructions for copying the product name link generated in funnelish - but it looks a bit dodgy on the actual order form (see image). Can this be changed or not?

Hi @natnjodie,
I think you copied the name into the wrong place, That name is copied into the Cart Product ID Box, as for the name of the product itself can be anything 
And tracking products that should be changed are under Funnel > Settings > 3rd Party Membership Tracking section, while the product you’ve changed is under Funnel > Step > Products which are the visible products.
